I make the same chicken but add some spices, I call it chicken Tuscany style! It's delicious. You guys have great recipes!!! |
| We love the skinless chicken legs - toss them with evoo, s/p, a very hearty shake of dried oregano, and squeeze lemon juice all over, then roast at 400 for 30-40 min - in the last couple of minutes, sprinkle shredded feta on the legs and broil (it makes a great crust since there is no skin). On a related poultry theme, we also like breaded and pan fried turkey cutlets (once done squeeze fresh lemon juice on top) - even Giant sells them nowadays - it is a bit different than chicken. |

There are many casserole/hotdish recipes out on the web based on these three ingredients. And many soups. If you haven't tried wild rice based dishes I highly recommend it. |
