Tricks for awesome chicken salad?

I only ever make it as a way use up the last of a roasted chicken so I second that. Usually I just whiz onion and celery in the food processor, and i also havebeen known to toss in whatver veg was leftover as well -cauliflower is awesone) then the chicken that I cut off the bone and some type of nut. Sometimes finer, sometimes chunkier. Dump it all in a bowl with some relish, mayo, mustard, salt/pepper as needed, and a handful of dried cranberries.

Really? Knowing I'm a big chicken salad fan, a friend surprised me with a huge container of Costco chicken salad the other day. I hated it, and had to throw most of it away.


I'm another who does not like the Costco chicken salad.

I just chop up a rotisserie chicken or two, add mayo + greek yogurt, finely chopped celery and vidalia onion or green onion, grapes and/or craisins and/or a small amount of diced green apple, salt and pepper, and a little bit of curry power. If no curry powder, a bit of lemon juice.
