My recipe is nothing special but I put it in lined muffin tins and bake it. The kids always think its an extra special treat when we have macaroni muffins.

If you want to make a great restaurant mac and cheese you may need to make a soubise first. This is basically a bechamel sauce with slow-cooked caramelized onions. It takes ages to make but tastes wonderful. I got the recipe from the book Ruhlman's 20.
