What are you packing for work lunches?

Mainly leftovers, but I meal prep with the need to have them for lunches in mind.

Today I brought the Skinnytaste skillet lasagna to work, which I made for dinner on Sunday night. Will be bringing it tomorrow as well. I make chili often, and that is always a bring-for-lunch-too meal.

I make a version of a bowl I had from sweetgreen and enjoyed: flank steak, rice, sweet potato, broccoli, pickled red onion. I put spinach on top after heating it up and put on some pesto or green goddess dressing.

I pack leftovers, but also keep a few frozen meals in the work freezer to keep me from buying lunch when I do not have the energy to pack. Souper girl soups also work. Not cheap, but healthier and less expensive than eating out (for me it’s healthier because I too easily over eat with take out )

I've been making a soup on Sundays and that gets me through work lunches.

I suspect this is a regional variation. What do you call it? Deli meat? I don’t really eat the stuff but I admit if someone says sliced turkey it’s hard to know what they mean unless they say deli meat or cold cuts.

I’m wondering if all these people who eat leftovers have teen boys. The only leftovers I routinely have last are things like roasted broccoli. Last night he went out with friends and had burritos, then came home and ate all the leftover pasta from the other night.

I did manage to make a salad this week with some leftover seared salmon.

I often do Icelandic yogurt, berries and granola. It’s easy to pack and surprisingly filling and hi protein. I use a full cup of fruit.

I started ordering meals from one of the meal prep services (Factor, Cook Unity, etc.) Yes, they are pricey (about $13) but it saves me from going out (where the cheapest thing is $20) and I get variety (I had been doing bagged salads with protein for years.) With the kids in college, this is my main meal (eat cheese/crackers/fruit/snack for dinner) so my grocery bill is very low.

I resisted the big canning jar salad trend for as long as I could, and I'm glad I finally gave in. I have a week of 7am to 7pm shifts coming up, and it's big jar-o-salad for the lunch win. I watch my macros and need enough protein so there is plenty of chicken/tofu/chickpeas or whatever in there in addition to the lettuce/veggies.

I'm also big on taking leftovers, and we eat a lot of casseroles around here, so that gets taken a lot as well (today I have a leftover enchilada casserole).

Bakery made croissants
Cucumber salad
Olives
Baby carrots
Chocolate covered almonds
Pumpkin seeds

Lately I like to convert leftover meat to soups for lunches so it feels like a new meal:
Pot roast to chili (add beans)
Chicken thighs or rotisserie chicken to chicken tomato soup
