What is your kitchen "closing" routine

I no longer have time for it. I just make sure food put away, maybe pan left to soak in hot soapy water, and everyone put their dishes in dishwasher. The rest can wait until tomorrow.

I disinfect the sink if there's been raw eggs, meat or fish during dinner prep. Other than that, usually all the above mentioned to wake up to a clean kitchen. Clean dishes put away in the morning to have room for dirty breakfast dishes. Not perfect though depending on what's going on; however, I never skip is washing and drying my knives ASAP after use in order to maintain their edge.

DH takes trash out.

I Dyson the floor in the morning.

Why to start in four hours?

Probably so they don't have to listen to the noise of the dishwasher while they're awake and on the same floor it's on.

DP. I do this because rates are cheaper then.

If needed, clean the stove top and sweep the floor. If there is stuff that you took out to make dinner - any appliances or special dishes - put that away.

Basically this. I also set out the plates / cups for next day’s breakfast to gain an extra moment of sleep.

Oh and take the trash out.
every day?

Get a smaller trash can to make you throw out trash daily or multiple times in a day when necessary.

OP here - thanks again - I've been trying to make myself do this every night and it's going ok / well

Kitchen closing is for restaurants that keep a hot grill.

Is it normal to run the dishwasher every night and take the trash out every night? It’s just me and DH… that sounds like a lot for two people? We don’t have any smell or bug issues

Yes! That is where it came from - there was a tiktok with someone coming down to the kitchen like: who closed last night? And since then I've been thinking, wait none of us really clean up except for major messes and it is kind of messy and hahah, maybe we should.

We need to run at least one load of dishes a day (5 people), but we don't have a full trash can every day.

I don't have one? I do the dishes. Wipe down a few things as needed, or close my eyes and tell myself that tomorrow is another day.

I wouldn't worry about the trash (unless it has chicken trimmings, sausage casings, or other meat in there. But for me, running the dishwasher nightly is a little luxury I allow myself.
