My kids current favorite dinner is naan bread pizza. I get the frozen naan from TJs but any would work. If using frozen I heat it for 2 mins. Then put pesto, rotisserie chicken, mozzarella on top and put back in oven for 2-3 mins.
Tomatoes and cucumbers as a side Dinner in about 5 mins, 8 mins including the toaster oven pre heating. |
NP - I was never WFH, but my commute is almost an hour each way. I can only imagine what kind of cooking I could do without spending 2 hours on the road every single day, even without changing the actual working time at all. |
I buy pre-cooked rice. It heats up in the microwave in 2 minutes or less.
Quick stir fry to go rough the pre-cooked rice: brown a package of ground chicken (no chopping required!). Add a bag of shredded cabbage (usually sold as a coleslaw kit, but you can ignore the dressing that may come with it). Sometimes the cabbage has shredded carrots too, that's fine. Once the cabbage is soft, add some stir fry sauce. |
This chicken enchilada soup is a favorite in our house. All it entails is dumping some raw chicken and canned ingredients in a slow cooker (or instant pot), chopping an onion (or just use onion powder instead), and adding a few spices. I prefer to use frozen corn, which is just as easy. When it’s done, shred the chicken.

We do tons of stuff with Costco rotisserie chickens.
You can eat them straight up, and there’s obviously a million sauce options - you can get cubed Japanese curry (just add water), bbq sauce pulled chicken sandwich, add to ramen, salads etc. Then you can make chicken soup with the bones. Theres also great bagged salad mixes There good sandwich meat that’s easy for weeknights. Growing up, my parents made a lot of soups and stews on the weekend to freeze and to eat during the week as needed |

Our go-tos. We try not to eat a lot of highly processed foods. We eat a lot of broccoli because we like it, it's good for you, and it's super easy to wash, cut into spears, and drop in boiling water for 3 minutes.
Fresh salmon fillets in foil packet(cooks in 15-20 minutes), white rice, green beans Hamburgers, sweet potato fries, broccoli Black beans from a can, sauteed peppers & onions, rice, cheese, salsa, etc, carrot sticks or fruit Leftover bean nachos or quesadillas, carrot sticks or fruit. Scrambled eggs and cheese, broccoli, toast Marinated boneless breasts (DH puts the marinade and chicken together in the morning) on the grill, baguette, broccoli Crudite: Cheese, hard boiled eggs, crackers/baguette, sliced raw peppers and carrots, olives, grapes. Delivery pizza Whatever more complicated meal we make on Sunday always includes enough leftovers for another meal during the week-- roast chicken and mashed potatoes or soup/stew/chili, etc. |
Uh, yeah. It still cuts into the time I have available to cook. All I'm saying is that makes sense to look for fast meal options when one adds a commute into the daily schedule. I'm not sure why that angers you so much? |
