Agree with Park Hyatt, St. Kitts. Also, the Four Seasons, Nevis is pretty spectacular (although likely more than you want to spend). Not sure of the rates, but Peter Island in the BVI might be an option.

Even 3 star hotels are ridiculously expensive over Christmas yet folks are suggesting 5 star luxury properties that are pricey even during hurricane season.
