Not in Bolzano. The hotel Stadt Hotel Città is absolutely lovely. I’d recover from jet lag there. |
I did a six day trip with my adult daughter to Europe right after Thanksgiving. That was great and you will enjoy the time together, wherever you choose.
I agree with letting your DC choose the destination and plan activities, including some separate time for each of you. I do worry that most of Europe is too crowded and too hot during summer months, except Scandinavia, but I don’t know the Dolomites. |
I love Canada, but you’ll struggle to fill a week in Montreal and Quebec, ultimately feeling bored and kicking yourself for not opting to make the trip to Italy. Just go to Italy. |

This for Canada. Both cities would be a win. For Italy, the first 2 days will be jet lagged. Would you pay X for 5 days in Italy? I would go for it. Particularly if it would be more of an outdoorsy vacay instead of a culture vulture tour. Being outside will reset your clock. |
If you are heading to Europe in July, do the easier thing and go to Quebec. You won't need 8 days in Quebec City, so visit Montreal. Montreal is amazing. |

Fly to Italy, check into your hotel, and take a two hour nap. You won’t feel jet lag. |
If you are paying for a trip for your adult child, I don't think you need to give them total control. |
