Ones I’ve returned to multiple times:
Anna Karenina - incredible but I found it much too long.
A few by William Saroyan
Many short stories (Borges, Carver, Updike)

I wish I was well read enough to truly enjoy Eco, or Joyce, but I know it mostly goes over my head.
