This is missing a substantial part of the quadrivium (what used to be the "whole" curriculum in European thought for centuries - not as familiar with what were considered "essential" subjects in the Islamic or eastern world)

No grammar, logic, or rhetoric. Basically no writing and speaking and detailed thinking. I guess since EE is built on boolean logic you could shove logic there, but it wouldn't get you to syllogisms.

And where did social studies - civics, history, economics, and geography - go?

Off the AAP website states submit art work.
“Student work samples (not to exceed five single-sided 8½” x 11” pages). Student work may include copies of art work, original stories, and other student projects on standard writing, bond, or copy paper.”

In the case of AAP, it represents Advanced and Academic.
