I don’t do this internationally, but on US trips, sure. The airport always has brochure stands with info on all the local attractions. I just pick up a bunch that look good and then work out an itinerary. If you stay at a hotel with a concierge, they sometimes have ready to go itineraries or they can direct you.

Not with kids with flying.

I do wing it for road trips including a drive to Florida during Covid virtual school. I often drive north and just book a hotel somewhere in PA or NY or MA. I have lived in all these states though so I know the areas. I have the Marriott app and have an idea of which hotels I may stay at and then book while I am at a gas station or eating.
