Best Mac and cheese for a kid crowd

It's good to know your kids, but your kids are not the most common denominator. And in OP's case, she's making a large put of M&C for a group of kids. If she wants to please the most kids and make sure the largest number of them will actually eat what she makes, she should use Velveeta, American or some other highly meltable, cheese.
