I agree with the PP who said to add a pasta night. Also, add a soup night now that it is colder.

Bibimbap (ish) is a weekly staple for us because you can use a variety of veggies. Using sticky rice and a gochujang sauce makes it especially yummy.

I made this soup tonight and it was much better than I expected. And easy! Add more chicken stock. I used broccoli I instead of spinach.

Huevos rancheros

Soba noodles in broth + soy + sesame oil + garlic + ginger + whatever protein and veggies you want to throw in (or store bought potstickers instead of the noodles)

Salmon “burgers” - grilled or baked filet of salmon with a homemade aoli on a burger bun (my kids love these. DH is making them tonight and I’m psyched)

NP and I made deconstructed egg rolls tonight thanks to this thread and I LOVED it - thank you, posters (incl the one who suggested adding egg, which I scrambled into the dish like for fried rice). Does anyone know what grocery store sells crunchy wontons to put on top?

Pasta with meatballs with red sauce
Pasta (a different type) with pesto and chicken or white beans.
Pasta (another different type) with white sauce (I use gravy+cheese) and leftover meat from previous meals.

Would you do risotto or polenta if you don't like pasta? Both can be done in a more quick and easy way than most recipes state - you really need to put the lid on, put it on low, and stir every 10-15 minutes. Cook up some veggies of your choice to add on top.

For taco night, or random meat night, what about something with turkey? You can make taco meat or chili with ground turkey; thrown in pinto beans and green salsa with the ground turkey to make a quick white chili. Or get some turkey breast, do a quick marinade with some soy sauce and taco seasoning, slice up and stir fry for turkey fajitas. Add peppers or onions if you desire.
