Recipes for Meatless Mondays

I am going to do a meatless monday to cut down on food bills. Can anyone recommend some quick easy recipes that would appeal to preschoolers and toddlers who are picky?

I usually don't hide veggies, but google Mark Bittman's creamy macaroni and cheese with cauliflower - my kids don't even know it's in there and they love it - bake it with some breadcrumbs on top. (Bittman has a good veg cookbook.) Plus this can be made ahead and warmed when you get home. We also like black bean and cheese quesadillas with guacamole, and mushroom and cheese risotto.

Basically, it's cooked vegetables in peanut sauce.

You can always do breakfast for dinner with egg dishes and fruits/vegs they will eat. I made zucchini pancakes (savory, not sweet) with cheddar cheese and called them dinosaur pancakes. Disappeared in no time.

And I agree with 19:30 about the cauliflower mac & cheese- so yummy.

I'd also look at some vegetarian Indian recipes

frozen pizza or homemade pizza.
pasta and marinara.
veggie chili.
love the beans and rice suggestion above, too. Red beans and rice are one of my favorites!

Beans & rice

Soak dried red kidney beans in water the nite before. Then, boil for 1+ hours with 1 fried onion, 3 cloves garlic, 1 can tomato paste, oregano, salt.

Serve over white rice. For pizazz, mix squeezed lime and a lil' oil with the rice only before serving.

seriously yummy - like a taco bell mexican pizza, only not totally gross - easy, and fast.
I made it with tortillas as the base instead of dough - extra crispy thin crust!

Lasagna, vegetarian chili, fried rice (with tofu), been or cheese enchiladas, falafel. hummus wraps.

Roasted cauliflower
Steamed or raw veggies and homemade dips
Falafel and hummus
Veggie stirfry with tofu - fry everything separately for picky eaters and put in separate bowls and thy can choose which veg they want
Scrambles eggs with salsa

I love tofu stir fry! Try the teriyaki tofu from TJ!
