Can I exclude the egg from Baked Ziti?

Anonymous
I'm sorry, now that we have a diagnosed egg allergy I keep coming here to ask questions and you're all so great.

I make a vegetarian baked ziti. For some reason it calls for one egg. I have no idea why. Do you think I can just skip the egg and otherwise make it the same way?

thanks (again).

It's just for binding. It'll be fine without it.

I never use an egg.

I never use egg in baked pasta dishes, somehow prefer the texture without.

Yes you can leave it out!

Many people with egg allergies can tolerate baked egg. Our allergist encourages our son to have as much baked as possible in the hopes that it will help him outgrow his egg allergy. You should definitely exclude egg from your ziti, but next time you see the allergist, ask about baked egg.

Not always. Depends on the pasta.

Correct. We buy egg-free pasta that was made in an egg-free facility. It's not great, but it does the trick.
