Healthy (nut-free) Muffin Recipe

My daughter has a minor egg allergy and in order to help her overcome her allergy, the doctor has asked me to give her baked egg (in a muffin) a few times a week. The problem is that I don't want to give her sugar or a lot of white processed flour. I would like to be able to make a zucchini muffin sweetened with applesauce, but I would love recipe suggestions.

Ive made an egg-free muffin before and she's refused to eat it. She's a toddler so she's picky so I need a good recipe that she will hopefully eat (and will hopefully be good for her).

Try this one, just leave out the walnuts. I never have them on hand so if I'm missing something but not including them, I wouldn't know.

I use all whole wheat flour and cut the sugar back to 1/2c. I also never put on the topping--these are breakfast for the kids and they don't need the extra sugar. I want to experiment with using honey or maple syrup instead of sugar. You could search on how to replace the sugar with bananas or applesauce. If I make the recipe with mini muffins, I can get about 32 muffins out of it. Super healthy recipe that actually tastes great and is relatively low in sugar!
