My goodness! The cave woman that I am just discovered Mascarpone. This thing is crazy delicious on bread.
How do you guys use it?

In cheesecakes and in cannolis.

Makes a great quick pasta cream sauce. Saute mushrooms and onions in marsala or similar, then throw into hot pasta with mascarpone.

Tiramisu. It also makes a wickedly good frosting.
In berry season, try a dollop over some lightly sweetened berries.

Giada De Laurentiis uses it in just about everything she makes - sweet or savory. Look up some of her recipes.

Whole Foods has it. Or you could try its Latin American cousin, guava paste, which you can find in ethnic markets.
