Tex-Mex "pie": Saute some onion and garlic, add in cumin, oregano, a bit of chili powder and drained canned beans, plus a jar of salsa if you have it, a drained can of tomatoes if you don't. Bonus if you have canned green chiles in the house. Stir in shredded chicken. Great soft taco filling, or make a "tamale" topping (boiling water + salt + pour in some corn meal and stir), top chicken mixture with some cheese and then the tamale topping, and bake in a pie dish.
Another option: chicken and asparagus crepes. Look up a crepe recipe (they are simple) and make a few crepes, fill with some sauteed onion, chicken and asparagus, cover with a white sauce (3 Tbsp butter + 3 Tbsp flour, cook to remove floury taste, add milk until reaches a nice consistency, s + p to taste). Bake. Can make the white sauce with chicken broth instead of milk and then it's a veloute. Could also saute some mushrooms with the onions if you have them, in which case add a bit of thyme while sauteeing.
