Big law associates and staff attorneys

How many hours of billable work do you aim for in a month? Do you do 200hrs as a matter of course? Or less? Or do you have so much work given to you that you easily do more than 200?

When I was big law (6 years), I always aimed for at least 200. Occasionally, I would dip to about 180, but more frequently, I was closer to 230 (with some 280-300 spikes). This was generally easy to do, as the work had to get done.

At our firm it was significantly less.

My group has basically been told that if we are not billing at least 200 hours a month, then that means we have availability and should be asking for more work. Reflects why so many attorneys burn out so quickly.

They want you to burn out. That is the business model. Haven't you figured it out yet?
