I opened it at Christmas, but the sell by date isn't until April 2013. Is there a rule like with lunchmeat that it should be eaten within a certain time after opening?

If it is 'extra moldy blue' or smells like ammonia, toss it. I'd be leery of eating it now after being unsealed for 2+ months.

| i wouldnt eat it if you opened it that long ago. the date on a food product is generally for unopened items. after open, the shelf life changes depending on the product. |
| You can always make a quick pasta sauce (mix with milk or half and half with a little chopped shallot or onion). If you cook it it will be fine. |
