Help me keep up my weight loss goals!!! Easy low-cal recipes needed!

I am totally proud that I have lost 4 pounds. Pathetically proud, but I have been trying to lose the same 10 lbs for about 6 years. I am more motivated and successful than I have been in the past, but I am running out of tasty low-calorie dinners that aren't terribly complicated. I am trying to serve my kiddos more fattening stuff (both underweight) so I am in the business of cooking two dinners, especially since one of mine is a ridiculously picky eater. So, basically I am looking for tasty grown-up food for me and the husband...all the better if I can easily fatten it up to serve to the kids too...

Any great low-cal ideas????

Skinnytaste is awesome. The crockpot chicken enchilada soup is a total winner.

I don't like her chicken pot pie soup, but here's a chicken and dumplings recipe from Extreme Makeover Weight Loss Edition:

I love spaghetti squash. I bake in the oven (cut in half lengthwise and place cut side down in a pan with an inch or so of water...forget the temp and time--I google each time).

I put pasta and meat sauce on top of the squash in lieu of pasta. I mix some spaghetti squash into eggs and other veggies and bake in a muffin tin for "on the go" breakfast.

OP here: thanks for the ideas! And the encouragement. In terms of calorie range...it depends on how many I've got left that day. Either is fine. Usually up to 500 is okay.
