urgent advice needed-- question about dinner tonight

We are really low on food and I need to feed myself and toddler.

I currently have some badmati rice cooking...it will be done in 20 min... trying to figure out what else we can eat with the rice.

Things wr have laying around the pantry are spaghetti sauce, cheese, beans, crackers, hummus, cream cheese, popcorn, ketchup, olive oil, butter, plain yogurt, cherry tomatoes and thats about it oh mustard amd mayo too.

Can u suggest a dish that I csn mskd out of these ingredients using the badmati rice as the anchor?

Beans and rice w/ a little olive oil. Melt cheese and mix in if you think you will like it and add sliced cherry tomatoes.

Heat the beans with olive oil and spices (cumin, garlic, corriader, oregano-- whatever spices you have. Serve over rice garnished with some shredded cheese and chopped up cherry tomatoes. Beans and rice are a complete protein and a healthy meal

This sounds yummy. Thanks pp. The rice is almost done do I just empty the csn of beans into pot of rice or should I warm the beans in a separate pot/ container and then mix?

If the beans are canned, I would do beans and rice with chopped cherry tomatoes on top. Maybe a cracker medley if that doesn't go over; hummus, cheese, cream cheese on crackers, maybe a tomato half on top of each.

you are probably done with dinner now, but fyi my toddlers love scrambled eggs mixed together with rice and black beans. for me i would have added chopped cherry tomatoes on top - could sprinkle cheese on it, too.

Tortillas change everything! Bean and rice tortillas with cheese and tomatoes. Sounds great, and is one of my DS's favorites.

Thanks to all the pps! Y'all are awesome. I decided to go with the rice withe beans on top. Rice is done and im warming the beans now. Im going to add some spices as pp suggested and then top with cheese and tomatos. Thanks to all for all of the great ideas!!

Op back. The rice and beans were amazing, by the way and very filling.

Thanks for asking I just didnt havevtime to go to the store today. Had to rush to pick up DS from daycare and he had a major meltdown on the way home as he was really hungry. As soon as we got home around 7pm, a little later than usual due to the rain,the raid on the pantry began.
