No sugar cake for allergy test

My daughter has an egg allergy and she has to do a "food challenge" at the doctor's office where we feed her a baked product with egg. The doctor has asked us to prepare duncan hines yellow cake mix. I would prefer not to make a box cake and would prefer not to have processed sugar in the cake.

I thought it would be easy to find a recipe online but I haven't been able to find one that has the right proportions. It has to have 3 large eggs in a 13 x 9 inch pan (or 24 cupcakes.

The other trick is that it has to be somewhat tasty so my daughter will actually eat it. Should I just break down and buy the processed cake mix?

I think you should prepare the food your doctor directed you to use. The processed sugar in one cupcake isn't going to hurt your child, and standardizing the results seems like a worthy goal.

+1. Is there a special reason behind your intense worry about your daughter having a few bites of a cake from a box? Is there something going on that we might not be picking up on?

Give the kid a break. A little sugar never hurt a kid yet.

FFS, be glad you're not required to force your kid to eat something nasty. I wish pregnant women could eat a crappy box mix cake instead of that nasty orange drink for the glucose test.

Yes. We've done several food challenges and I say you should just used the boxed mix. If your daughter passes the challenge and you incorporate baked egg into her diet, THEN you can find all kinds of recipes with varying doses of egg, but for this one, as you know, it's really important that you have a standardized amount of egg. You also need to make sure your kid will eat the stuff, and because it is a food challenge, you can't try it out on her beforehand to see if she likes some weird sugar-free thing you've made up.

Other than for food challenges, I never use boxed mix, either. I do use sugar, though.
