I need some new ideas for recipes that have a creative next day (leftovers) option. I've gotten into a rut of just throwing whatever the leftovers are (pork loin, shredded chicken, etc.) into a tortilla or wrap . Do you have any recipes/ideas for a meal one night that turns into a new meal the next night (that doesn't involve tortillas or sandwhiches!) ? Thanks!

Roast chicken with roast veggies night one. Chicken noodle soup night two.
Salmon night one. Seafood cakes on greens night two. |

Do a pork loin with cuban spices, then slice thinly and grill/press with ham, cheese and pickles for cubanos. Yes, it's sandwich-based, but perhaps different flavors than you usually do.
You can also hide a lot of leftover sins in quiche and other egg-based dishes (stratas...) |

| Your leftover meat (shredded pork or chicken) can also be put into pasta instead of sandwiches, or in a casserole of some kind. |

Chop up whatever meat, chicken or seafood you have and serve over pasta. Use jarred alfredo sauce in a pinch, or create your reserve some pasta water, and pour pasta into pan with meant/chicken/seafood, add some pasta water and greated cheese.

First night serve hot with steamed veggies, potatoes etc. second night chop and heat the chicken and combine with peanut sauce and either serve with Asian noodles or a stirfry. Third night, shred whatever chicken remains and make quesadillas or chicken salad to serve over lettuce. |

roasted chicken one day can turn into... chicken tetrazzine or basically any chicken pasta w/ cream sauce or chicken noodle soup (especially with the bones) or chicken chili or chopped up chicken stir fry or chicken on top of salad or chicken salad w/ grapes & walnuts or instead of a wrap, use the tortillas & add shredded mozzarella for chicken quesadillas. |
Once a month or so, I will roast a large chicken, then with the left overs, I'll make a soup one day, chicken pot pie another day, chicken alfredo another, stir fry and then fajitas... for half the month my family is seriously SICK of chicken

| Brisket one night; brisket sandwiches the next; brisket (cut very tiny) and barley soup the next; brisket shredded on salad the next night. With different spices/sauces -- you can really change the flavor of the respective dishes. |
