Need new quick and easy dinner recipes

I feel like I make the same things over and over. Anyone have any good recipes they would like to share?

During the week I tend to do a meat (chicken, pork chops, etc.), rice and frozen veggie and its getting kinda boring. That said, I also need to keep it pretty simple and quick.

Chicken enchiladas with green chili sour cream sauce
*These are seriously so so good*
10 soft taco shells
2 cups cooked, shredded chicken
2 cups shredded Monterey Jack cheese
3 Tbsp. butter
3 Tbsp. flour
2 cups chicken broth
1 cup sour cream
1 (4 oz) can diced green chillies

1. Preheat oven to 350 degrees. Grease a 9x13 pan
2. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.
3. In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
4. Stir in sour cream and chilies. Do not bring to boil, you don't want curdled sour cream.
5. Pour over enchiladas and top with remaining cheese.
6. Bake 22 min and then under high broil for 3 min to brown the cheese.

Tacos or quesadillas
Eggs - omelettes or frittata with toast and fruit
Grilled cheese and soup either homemade or canned
Pasta w/ jarred marinara and homemade or frozen meatballs
Burgers and frozen french fries
Waffles, pancakes, or french toast with fruit
Chef salad (veggies, cold cuts, hard boiled egg, cheese)
Sautéed shrimp over rice w/ veggies
Roasted pork tenderloin with baked or roasted potatoes

PP here, sorry, just realized you wanted actual recipes not just ideas! My options are pretty simple, don't need a recipe, but when I am on my computer I will post some links to my favorite quick and easy recipes.

Soy Honey Salmon: mix 1/4 cup honey with 1/4 cup soy sauce. Mix in 1 tsp ginger powder and 1 tsp garlic powder. Pour over 1 pound salmon filet, bake at 450 for about 15+ minutes until flakes easily with a fork. Before adding the sauce I season salmon with salt/pepper and 1 tsp oil.
