Place catfish fillets in aluminum foil, and season w/ fresh garlic, butter, lemon juice, sea salt and pepper. You can replace butter with a healthy oil if you want (avocado, olive, grapeseed, etc.). Put in oven at 350 and allow everything to steam cook for about 15 minutes, open foil for last few minutes if you want it a little brown.
I like to serve w/ fresh spinach and roasted potatoes because they are both quick and you can cook all of it in the same pan together, just put each one in separate aluminum foil sections.
