Baked potato bar for dinner?

What protein do you do? What kind of toppings to make this a well-rounded, reasonably healthy meal?

Chili (or beans), cheese, broccoli, onion, sour cream. Yes some fatty stuff.

We just did this the other night. Amy's makes a canned low-sodium vegetarian chili, so did that with a bit of cheese and sour cream and roasted broccoli on the side.

DH isn't always fond of meat-free meals, but thought we should do this one more often. No-fuss and great for this weather.

Turkey bacon. Greek yogurt. Chives. Also cooked spinach with feta cheese. Fried mushrooms. Canned corn. Hummus. Falafel.

I like mine with steamed broccoli and cheese (usually cheddar, but just about any type works).

Mmm, thanks for this idea! Sounds like the perfect idea to make for the night after you make chili.
