Thanks! Was thinking about jicame-something! We have attendees with shellfish allergies or I would pick that, too.

Jicama slaw with green apples, red cabbage, (non-green) peppers, sweet onions, and celery with a light, fresh orange/lime cilantro vinaigrette. If you like a little heat, add some finely minced serranos for heat.
