Basically, you have to read up -

But the way to learn is to go to flyertalk and just start reading the forums. You'll find that's where the gems come out - a special bonus on Amex or an easy way to get 5,000 points if you buy your next plane ticket on orbitz or, sometimes, it's just about knowing there is an offer out there - people will post special links for targeted bonuses (I.e AMEX last year offered up to 100,000 points for new platinum customers - but only if you knew how to get it. Everyone else got 20,000.)
