Nice Christmas Dinner Options that will freeze well afterward

I am going to my grandfather's for Christmas and ever since my grandmother passed, I always leave him with TONS of food before I go. I usually make a big cake and cut it into pieces and freeze it, do pancakes and quiches and freeze them for breakfasts, and then buy a stack of TV dinner trays and fill them with meals for the freezer. I end up fairly exhausted but it's worth it for him to have the goodies after I've left.

This time I'll be 8 months pregnant and I'd like to double dip. He's a traditional guy and so we do a fairy upscale traditional spread for Christmas. Do you have recipes you'd recommend that would freeze well afterward? I'd like to make large portions of Christmas dinner and have a couple proteins (beef and turkey or something) and then use the leftovers to create a series of dinners for him.

Last year, for Thanksgiving, I took the leftover turkey and made a series of individual turkey pot pies that were a huge hit, so I'm also open to suggestions that involve making something OUT of the leftovers, but I'd love to just use the straight dishes.

If you have any suggestions for holiday dishes you've made that have ended up freezing really well afterward, I'd love to hear about them!

fairy should be fairly. We do not do a fairy upscale dinner, whatever that is

Ham freezes well.
