Christmas Eve food that's good for leftovers the next day

We are hosting ten people for Xmas Eve. My parents are then coming over the next day for Xmas dinner. They know that we will be eating leftovers (I have two kids in diapers and work on Xmas Eve). The only thing that I can think of is a honeybaked ham. I would happily do that, but we are going to IL's on Xmas morning and they have bacon. So, that would be too much pork. Ideally I want a meal that will taste just as good the second day as the day of... TIA

We had a "Feliz Navidad" meal last year. Enchilladas with green & red sauce, rice, beans, etc. It was wonderful and tasted even better the next day.

Roasted turkey?

For your parents--Mashed sweet potatoes are quick. Throw together a green salad.

What is this "too much pork" you speak of?

+1. No such thing.

Ham the night before (on a plate, with sides); ham the next morning or lunch (on fresh baked biscuits).

though the enchilada thing sounded pretty good too.

I'm planning to do a Christmas Eve taco bar. Pulled pork (chicken or beef would be good too if you don't want more pork), Mexican rice, beans, and an assortment of toppings. Makes a nice change from the traditional holiday food we'll be having the day after.
