The Silver Palate recipe is the best black bean soup I've ever had. My kids love it. I think the addition of the sherry and the brown sugar are what bring it to the next level. I make it entirely vegetarian - just leave out the meat.

Personally I wouldn't do the cheese. Don't know what they're thinking. But otherwise it looks/sounds good.

OP here. Thanks everyone, I only saw the first two replies until now. I should have planned ahead better, turns out I didnt really have time to make it with dried beans. I ended up going with this recipe and it is so delicious! (I drained and rinsed the beans and corn).

I second the Dave Lieberman recipe! My husband is a huge meat guy so I actually add sausage to it in addition to the bacon. Healthy, I know. Everyone that we've ever made it for raves about it.
