Brunch for 50

I'm beginning to worry that I'm in over my head. I was going to do:

bagels and cream cheese
egg salad
quiche
mixed fruit
sweet baked good of some sort - maybe pumpkin muffins
pasta salad

Do I need to have 1 serving of each thing for each person?

Yes I think you will need at least 50 bagels anyway, becuase you aren't offering too many options. If you also had say smoked samon and tuna fish with croissants, you might be able to scale back on other items. Without meat, everyone will be eating more carbs and bagels are the centerpiece.

Ditch the egg salad if you're having quiche; I would add smoked salmon

You'll want to be able to enjoy your party; I would buy many things premade, e.g., quiche, muffins, etc. (Mini quiches might be easier than whole serving wise.)

Don't forget juice, coffee, and water.

Strata might be easier than quiche, and could be heartier. What about roasted potatoes as well? Figure a bagel per person and maybe get a few extra, even if you suspect you'll have leftovers (you can freeze the leftovers).

I totally agree on the strata.

Egg salad sounds like an enormous pain in the ass.

If this were me, here is what it would look like:

-Steel cut oats in the crockpot-recipe here, I sub whole milk for cocount milk: http://www.hungryhungryhippie.com/crockpot-steel-cut-oats/
you can put this on the night before. Might only end up 12 servings or so, but that is fine, I'm sure not EVERYONE will want oats, but it is a healthy option for some. I'd put out a some nice toppings for people

-If there are kids involved, I'd have some frozen waffles handy.

-A few days in advance, I would make 3 dozen bananna nut muffins. In my experience, these hold very well in zip lock bags.

-A few pans of Strata and possibly baked french toast if you have double ovens.

-Bagels and Lox as you suggest (only Item that I would plan for one for each guest)

-I have an Anita's near my house and I would DEFINITLY roll over that and pick up a few dozen breakfast burritos. They are cheap and delicious!

-Mixed Fruit

PP has some great suggestions and I agree that a strata (or three) would be better than quiche. You can prep strata the night before, and bake it in the morning.

Allow at LEAST one serving per person. I always allow for more.

If it were me, I would do:

bagels and cream cheese; tomato, onion, and cucumber slices
whitefish salad and/or lox, if budget allowed
strata
cheese and crackers plate
green salad
mixed fruit
two kinds of muffins
pasta salad with a protein in it

Brunch for 50? It's going to be awfully difficult to make quiche, or any egg dish, that can feed that kind of a crowd with just one oven.

Personally, I would just go to Panera, Cosi, or Corner Bakery and get it catered. All of them will do nice brunch-type trays. Done.
