I have onions, two red peppers and a dozen white potatoes - what can I make?

Help! I need ideas on what to make with two red peppers, about a dozen onions and a dozen potatoes.

Home fries: chop it all up and sauté it in a little vegetable oil.

Roast it all (maybe just 2-3 onions?) diced up in a pan with olive oil, salt and pepper! Yum!

Paprikash. Super easy and quick. You can skip the tomatoes and add a pinch of cumin if you don't have caraway seeds.

Grate the potatoes, mince onion and peppers, bind with an egg and make potato pancakes!

I would roast all the onions, but I LOVE roasted vegetables and will eat them as a meal by themselves.

Caramelize the onions, add peppers, then add sliced boiled potatoes and heat through. Best with bacon fat. Add eggs and bake twenty minutes for a frittata.

Actually, a true Spanish tortilla does not contain peppers.
