Ive got a preschool pot luck coming up and am at a loss for an easy to make entree that serves 12. Not looking for recipes per say, just ideas.

If you want easy, do frozen meatballs in a crockpot with some BBQ sauce on them. I find most potlucks are a lot of side dishes, salads, and desserts.

Google Pillsbury Bake-off Zucchini Pie. It's pretty easy and people love it. Bonus, it's a vegetarian entree. For 12 people, you'd probably want to double the recipe.

Ok, so share the recipe. Thanks.

My go tos are taquitos, take out noodles from a Chinese restaurant, meatballs, cabbage and noodles, and cut out cookies. I host a lot of pot lucks and things people bring are rotisserie chicken, rice casseroles, egg casseroles, egg salad, reviled eggs, sausages of various types, sesame string beans, potato and pasta salads, and finger desserts, like bite size brownies and cookies.

Cold noodles with peanut sauce. Super easy and a crowd pleaser (and vegetarian).

True, this is SO good. But pretty ambitious for a potluck. You must really like your potluck people.


Chilaquiles are easy to make, and pretty popular. Some people at the potluck may not know what they are, but once they try them, they'll be back for seconds.

Only use one can of biscuits. Use healthy request condensed Campbells, and add 3/4 of a can of low sodium chicken broth.

Often dump in some frozen mixed veggies near the end to make it more "meal"

Pick up a chick fil a tray of nuggets- 64 nuggets were $23 with tax. I brought them to a pot luck this weekend and everyone loved them!

Maybe last year... But this year id get nothing but dirty looks if i brought chick fil a. The politics in your area may be different.

Eyeroll all you want, 21:22, the truth around here is pretty clear. Chick-Fil-A is not welcomed in DC.

On topic, OP, I usually make a vegetable stew from this book http://www.amazon.com/Cabbagetown-Cafe-Cookbook-Julie-Jordan/dp/0895941929 or this Moroccan Stew http://www.moosewoodcooks.com/2011/07/morccan-stew/. Pair both with rice.

Both are surprisingly successful with kids.
