Spinach, dried cranberries, goat cheese crumbles, optional croutons or almond slivers.
Champagne vinaigrette

Baby spinach, goat cheese, toasted pine nuts or walnuts, and something red--strawberries, beets, or dried cranberries (depending on mood, season, and availability).

Serve with balsamic vinaigrette. Don't dress it in advance. (The spinach can get wilty, and the vinaigrette can break apart.) Let people dress their own.

Cross-posted with PP. That's funny--great minds think alike. (Or that's just one easy salad.)

The above is a go-to salad of mine as well. Another good salad Especially in warm weather is chopped romaine, chopped cucumbers, halved cherry tomatoes, sliced black olives (optional), chopped red onion, and crumbled feta. Right before serving toss in a Greek vinaigrette with a squirt of lemon, or a lemon vinagrette dressing.

I've never done it for a party, but my favorite salad in the world is chopped iceberg, chopped tomatoes, and ranch dressing. That's it.

toss chopped avocado, red onion, cilantro with a bit of lemon juice, olive oil, red pepper flake. Serve on a bed of spring mix lettuce or your preferred green.
