What are your super quick go to meals?

I've been on bed rest for the last few weeks of pregnancy, which means that all of the housework falls on DH, including cooking dinner. We're lucky to have family and friends who drop off a few meals a week, but he needs to cook a few nights to avoid carryout more than once a week. We're burning out on pasta, so what are your other quick and easy dinner ideas? By the time he works all day, feeds DS, puts DS to bed, straightens up, does some laundry, deals with the dog, he doesn't have energy for cooking anything that takes more than 10-15 minutes! t figure now is a good time to gather some ideas, since I won't have the chance to cook and fill the freezer like I did with my first. So, we are going to continue to need very easy dinners once the baby gets here. Thanks for any suggestions!

I have three:

Buy chicken tenderloins, Pre-heat oven to 375, cut in half lengthwise (I use scissors), place in a baking dish and top with salt, garlic, Parmesan cheese, and a few tablespoons of butter (one for every 2 tenderloins). Bake 15 minutes, and serve with veggies and couscous.

My second one is ouevos rancheros. Put two large cans or diced tomatoes into a large sauce pan. Season with sea salt, garlic, cilantro, and heat to a simmer. Crack several eggs into the mixture (my pan fits 4 without touching), cover and simmer 5-10 minutes, or until the eggs are cooked through. Serve over hard (flat) tortillas with typical taco fixings. I also typically make some homemade guac to go with it--squish an avocado and add some of the tomato mixture, with extra salt, garlic, and cilatro.

Last, isn't a recipe, just a suggestion: breakfast for dinner. Pancakes, eggs, fruit and sausage or bacon are easy and fast to whip up, and everyone in my family loves it.

Trader Joes has lots of great dinners in a bag. You can't eat them every night, but they'll do. Get the salad in a bag to add to it, and you've got a meal.

Scrambled eggs and toast. Add fruit or vegetables on the side.

Quesadillas.

Rice bowls with either beans, avocado, cheese and salsa or (separately) cut up tofu or tempeh and vegetables.

Here is a typical meal in my house: grilled meat/chicken/or fish which takes 10-15 minutes as long as we've remembered to defrost the meat (we try to throw a marinade on the meat and stick it in the freezer as soon as we bring it home from the store - then whenever we want to cook it, take it out of freezer the night before and the meat marinates as it defrosts) - plus a veggie which we often eat raw (like chopped fresh peppers, carrots, cukes, etc) or steamed in the microwave (like broccoli or green beans) and tossed with evoo, salt and mrs dash lemon pepper - plus good bread or rolls which we either have fresh or we toast it from freezer (then I might brush it with evoo and sprinkle shredded parm cheese on it). Not fancy but tasty, extremely quick, balanced, and toddler friendly!

Here's what we ate tonight:

Sweet potato fries that I purchased in a bag from Costco. Preheat oven to 400 and bake for 20 min.

I defrosted chicken breasts in the microwave, drizzled garlic-seasoned oil on them, plus some kosher salt, and let them sit for maybe 15 min. Grilling took maybe 10 min.

Served with a big fresh salad (mixed greens, baby carrots, cherry tomato, sliced red bell pepper).

Soy Honey Salmon: mix together equal parts soy sauce and honey (I use 1/4 cup each). Add 1 teaspoon each garlic powder and ginger powder and mix well. Sprinkle salmon filets with salt and pepper, and then pour soy/honey sauce over salmon filets and bake for 15-18 minutes at 450 degrees. I put foil in the baking dish for easy cleanup. You can also add some asparagus on top of the salmon, but that only needs about 10 minutes to cook, so take it out early or put in in late.

Saute salmon with pepper, serve with lemon slices. Or saute salmon with a little maple syrup & water in the pan, then sprinkle with pecan pieces. Or you could bake these, but I think sauting is faster than waiting for the oven to heat up.

Also try cooking more on the weekends and eating leftovers during the week. Soup and baked chicken recipes are good for this, or anything else that reheats well.

Hot sandwich rolls. Buy a roll of Pillsbury pizza dough in the refrigerator section (where biscuits, croissants, etc are). Unroll so that it is wider than it is tall. Layer your favorite combination of lunchmeat and cheese. Roll from the bottom up. When you get to the end, pull the dough over the edge of the meat and cheese. Lay out on a baking sheet and bake according to the instructions on the roll. Slice so that you end up with spiral cut sandwiches. A few combos that I like: roast beef with horseradish cheddar (and if my mustard-hating wife isn't eating, I put mustard on it as well), Ham and sharp cheddar, turkey and pepperjack. Also, when making for parties, I make two and then I bend them with the ends touching so that it becomes a sandwich ring. Looks great coming out of the oven and then I put it on a big cutting board with a knife and let everyone cut slices the size they want. I make two "flavors". Very easy and very good and quite good for dinner. Recommend that you get your deli meats from the deli rather than the prepackaged ones. The deli meats are slightly moister and work better. The prepackaged ones are slightly drier and get moreso when baked.

- Olive oil
- Optional - chopped yellow onion

Cook on stove covered on medium to medium-high for 20+ minutes.
