| I have lots of recipes and ideas. My problem is, our 3 year old does not like his food mushed all together (as in casserole, soups, stews..) I am in need of ideas of foods to make ahead of time that DS will eat, too. We don't want to be heating our meals up in the microwave while having to prepare someone different for our son. This would defeat the purpose! Any ideas or suggestions? |
| Op here. Meant to write "something" not "someone." Also, want to add that these meals are for the days and weeks after bringing home baby#2 |
| No real suggestions for you because what I made in advance was more of the casserole variety. But, I went to Trader Joe's yesterday and they had a TON of pretty interesting frozen foods that are supposed to be decent (I read reviews in advance). I would check out your closest one. |

Individual meatloaf. Make your meatloaf recipe and then hand mold smaller ones, bake them and then freeze. Make gravy on the side and put in a container and freeze. You can thaw/reheat both in a microwave and then add microwave veggies on the side. Mashed potatoes can also be frozen and reheated.
Pasta in spaghetti sauce can be made and individual containers of pasta and sauce can be made and thawed/reheated in the microwave. Chili or sloppy joes can be made and frozen. |

Would DC eat a breakfast burrito type food?
baked empanadas? You could always do a deconstructed casserole |
| Lasagna? I often portion leftovers into individual servings, wrap in plastic and freeze. I pack them for lunch - the portion is thawed by lunch time and you can just reheat it. |

Roast and carve a chicken, pull the meat iff the bones, and freeze. I do this regularly and it is a lifesaver as you can toss it into salads, soups, pasta, etc (and kid can eat it plain).
You can also make rice and freeze Will ds eat smoothies? Blend some fruit and freeze in ice cube trays. Pop a couple of thise in the blendwr with some yogurt and youve git a healthy treat |
| Personal chef here. Freezing foods is what I do. Some suggestions: stir-fry meat in its marinade (you can keep frozen veg separate and combine a la minute), meatballs or burgers, satay, chicken wings, chicken tenders (won't be crunchy), kebabs, BBQ, short ribs, tomato sauce for pasta, dumplings, baked beans, precooked rice (plain or fried), crepes (you can use them as a wrap for all sorts of things), fresh pasta (ravioli, etc.; freeze flat before packaging), cheese tarts, cole slaw, twice-baked potatoes, cornbread (or other quick breads), pancakes, waffles, french toast, muffins, sauces, dips..... |

OP here -these are some great suggestions!! I didn't know it would be ok to freeze some of the items mentioned here, but I plan on doing it now.
In particular love the trader joes, meatloaf, roasted chicken, rice, meatballs, muffin ideas!! Please keep'em coming! I am thinking this will go beyond the first couple weeks home with # 2.! |
