What has everyone been eating in this heat?

We have been cooking most nights, but other nights just don't feel like turning on the oven and/or eating hot food. What has everyone been eating for dinner on these hot nights?

We grill a lot. Chicken, burgers, steak. And lots of fruit.

Today Roasted a butterflied leg of lamb with potatoes, and will accompany it with yoghurt and cucumbers salad. But mostly relying on summer recipes: cold soups, salads, etc.

Grilling a bunch of plain chicken and steak on one night. Then making various cold pasta, rice and green salads on a night by night basis and adding the protein, and the flavors from the dressing/spices flavor the protein.

We have been eating a lot of fruits and vegetables. I can't eat heavy in this heat.

Alot of grilled corn, grilled onions and peppers, tacos, cold pastas, quiche

Fast/casual restaurants (Moby Dick)
Vietnamese summer rolls & shelled edamames

tonight I made shredded chicken breast in the crock pot and put it in pitas with yogurt sauce, cucumbers, and tomatoes. The crock pot is great because it doesn't require standing over the stove. I have also done pulled pork, bbq chicken, etc. in it.

Not OP but this sounds good. Do you have a recipe for the yogurt sauce?

It is about halfway down. I used chicken breast and fat free yogurt though. Very good and easy.
