How long can I keep shredded carrots in the fridge?

I am hosting a lunch on Sunday, and am trying to do some tasks ahead of time so that I can sleep in a bit On the menu is a shredded carrot salad. Will the carrots keep well if I scrape and shred them on Friday and store in a ziploc bag? I plan to dress them only 10-15 minutes before serving.
Any other storage tips? Thanks in advance.

shake a little lemon juice or other acid on them to stop them going brown.

Try scraping and shredding one today and see how it looks tomorrow.

You can buy pre shredded carrots at the grocery store. Problem solved.
