baby artichoke recipe

never made them before--does anyone have a favorite recipe/method for using them? TIA!

Do you mean small, fresh artichokes? Like, regular fresh artichokes, but small? If so, just wash them well, and put them in the pressure cooker with about 1/2 " - 3/4" of water, cook until tender. Or boil whole until bottoms are tender. then scrape everything off the "heart" until clean- leaves that size are not worth the trouble to eat. Hearts should be tender enough to smush with a fork. Meanwhile, saute some garlic (to taste) and salt with olive oil and butter (how much depends on how many hearts you have) in a non-stick pan on very low heat. VERY low - so nothing burns or turns brown. Mix togther well with hearts and spread on bread or pasta! Yum!
