What should I do with sour cherries?

I just picked up a pint of sour cherries at the farmer's market. Any ideas of what to do with them? I am not a pie baker.

Sour Cherry Pudding -

1 cup sugar
1/2 cup butter
Cream these together until smooth

2 eggs
3/4 cup milk
1 1/2 cups flour
1 tsp. Baking Powder
1 pint sour cherries OR blueberries (washed and pitted)

Mix all together and put in an 8 or 9 inch round pan that has the bottom sprayed or buttered.

Bake 350 degrees for 35-40 minutes Check by toothpick in center coming out clean.

Cool and cut into wedges -served with sugar and milk

Make a compote. Very versatile topping for ice cream, pancakes, what have you.

I make a cherry sauce for chicken or pork with sour cherries, apple juice, and brandy. It's delish.

Soak in Armagnac. Layer in parfait glass with meringue cookies, vanilla ice cream and whipped cream.

What were you planning to do with them when you bought them?

look up "vareninki"-Russian dumplings made with sour cherries-so good-basic dumpling dough with the cherries inside, boil and serve with sour cream
