Chilled Strawberry Soup
Ingredients 1 pint sliced strawberries, tops removed 1/2 cup granulated sugar 1 cup half-and-half 1 cup (8 ounces) plain yogurt 1 1/2 tablespoons vanilla 1 1/2 tablespoons brandy 1 teaspoon cinnamon 1/2 cup (4 ounces) strawberry yogurt 4 hulled strawberries 4 mint leaves In a food processor or blender, purée strawberries, sugar, half-and-half, and plain yogurt. Pour into a bowl and add vanilla, brandy, and cinnamon. Stir in strawberry yogurt until well combined. Refrigerate for 4 to 6 hours. Garnish with a fresh strawberry and mint leaf. |
| Puree cantaloupe and some water, add a little simple syrup or sugar. I also puree in some basil leaves and garnish with thinly sliced basil. |

I had a peach soup in Prague eons ago and it was yummy. Salt & Pepper had a watermelon soup last summer that got good reviews from my MIL. Vichyssoise, aka cold potato soup, is a classic, of course. Thank you for reminding me of cold soups. An easy dinner option for the months ahead. |
