I make an eggplant and garlic spread that is somewhat like baba ganoush. Serve with toasted garlic rounds.
I usually make what I call a bruschetta bar. I make roasted eggplant and garlic spread, roasted red peppers, onions and garlic spread and roasted squash with curry spread. Then I put them in bowls on a platter and put garlic rounds on the platter around the bowls. It's usually pretty popular. And all of the above are pretty easy to make. |
