| I have 26 points a day and by dinner I sort of lose it...I need ideas! Usually I have about 7 points left. The tricky thing is that I am gluten free and a vegetarian. I will eat fish sometimes though. What do you cook in the 7-9 point range? |
| I also get 27 points. I try to have 13 left for dinner with the help of a big salad for lunch. Unfortunately I don;t have too many vegetarian ideas.. rice and beans. |

| Hummus (2tbsp= 1pt), spinach/shredded carrots, whole wheat pita (3pts). Whole wheat pasta, chick peas, veggies, and either a little pasta sauce or a splash of olive oil; side salad. Veggie omelet with side salad. |

Veggie chili -- I make mine with light and dark red kidney beans (3 cans), Morningstar Farms crumbles (1 bag), diced onion, garlic, chopped tomatoes, hot chili powder, oregano, and a teaspoon of Splenda ... 5 points each for 6 servings. I'm not chary with the onion or the tomato Or the seasonings, but to each their own on that front.
Eat it over bulgur -- half a cup is 2 points. If you have 9 points left, add 1/4 cup of low fat shredded cheddar on top. |

I'm not sure how many points this is, but I love this pasta dish from "River Cafe Cook Book Easy".
You chop some tomatoes and marinate them in white wine vinegar, olive oil, crushed garlic, dried oregano and lots of capers. Add dried chilies if you like spices. Meanwhile, cut some zucchini into matchsticks, salt and leave to drain for about 15 minutes. Rinse, then squeeze the moisture oil. Fried the zucchini in hot olive oil until they start to brown then, off the heat, add the tomato mixture. Add cooked GF spaghetti and then mix. Honestly, this is so delicious and fairly quick to make. Even my three year old loves it (without the chili). |
