| Cube it and add it to frittata. Make risotto and add cubes to that. |
| If you have a food processor (grater works, but is a bigger hassle), shred and sautee with garlic, then toss with pasta, olive oil, lemon, thyme and feta. Yum! |

Do you mean like regular yellow summer squash?
If it is, halve it lengthwise, boil it, scoop out the insides, mix up sauteed onions/garlic/breadcrumbs/squashy stuff you scooped out, fill it back up like a deviled egg, top with some cheese and bake. Delicious! |
