| We're in the same boat, so I'll be interested in responses. The only thing I can think of are stew (in which case the lamb would probably need to be uncooked to start) and lamb pie of some sort. |
| Slice and make a couscous salad with crumbled feta, chickpeas, black olives, red pepper, spinach and grilled eggplant (or whatever similar veg you have on hand). Delicious. |

| White (cannelini) beans, cucumber, onion, feta, tomatoes. Italian dressing. Mix up with cold lamb, serve with pita. |

| My mom used to make a delicious casserole by layering lamb pieces w/ Orzo. Tomato sauce was lightly mixed in w/ the Orzo. |
