Leftover Lamb Ideas

I have lots of leftover lamb from Easter dinner. It was a boneless leg of lamb that I grilled. What can I do to repurpose this meat? Thanks!

We're in the same boat, so I'll be interested in responses. The only thing I can think of are stew (in which case the lamb would probably need to be uncooked to start) and lamb pie of some sort.

Slice and make a couscous salad with crumbled feta, chickpeas, black olives, red pepper, spinach and grilled eggplant (or whatever similar veg you have on hand). Delicious.

slice it up with some cucumbers, red onion, and tahini dressing in a pita!

We like it with hummos, baba ganoush, tzatiki, etc. with grilled vegetables and pita bread.

White (cannelini) beans, cucumber, onion, feta, tomatoes. Italian dressing. Mix up with cold lamb, serve with pita.

Lamb, roasted red pepper and goat cheese sandwiches are also good.

My mom used to make a delicious casserole by layering lamb pieces w/ Orzo. Tomato sauce was lightly mixed in w/ the Orzo.
