Dessert for Easter Dinner

My MIL has asked me to bring dessert to our family dinner on Sunday in upstate NY. I need to make it Friday night as we are driving up on Saturday. Any suggestions on a dessert that will still be good/fresh/tasty by Sunday afternoon?

cheesecake topped with fresh strawberries? If you have a cooler that would keep it cool on the way up.

Maybe brownies or bar cookies that you don't cut until Sunday (keep them in the pan to keep them fresher).

Coconut cake! My mom has used this recipe for years and it's perfect for your get together because the longer it sits with the filling soaking into the holes you poke in the cake, the better it tastes. It would be perfect by Sunday.

One great thing about cheesecake is that it freezes well. Make it, freeze is Thursday, Travel on Friday (with it in a cooler). When you get to upstate NY, it should be partially unfrozen. Put in refrigerator and it will be fine on Sunday.
