cottage cheese in place of cream cheese for cheesecake

Just use fat-free or light cream cheese.

I only replace ricotta with cottage cheese in lasagna. I think it would be all wrong in cheesecake.

problem is I forgot to buy cc and I have a child home with the stomach flu and cannot run out to the store-all I have is one block of cc and cottage cheese at home right now. I know it is not ideal but I was hoping someone had done it.

You can sub plain yogurt for some of the cream cheese. There is a Stonyfield receipe out there--google it.

Can you try putting the cottage cheese in a mini-food processor so at least you get the texture closer to cream cheese? Sounds interesting to me. it will certainly be healthier!

yeah the reason I asked was that I came across several recipes for using cottage cheese but putting it into a blender first and then continuing on with the recipe.

Actually, I have a recipe from my great grandmother for a cheesecake made with cottage cheese. It's light and lemony and delicious!
