Help me make a meal around this chicken

I'm roasting some chicken (leg quarters, if it matters). I almost always serve chicken with sides of steamed or roasted veggies and a wild rice blend; what can I do tonight to make it a little different?

I'd keep the veggies and switch out the starch:

mashed sweet potatoes
yucca fries (love those!)

This pasta is delicious (skip the salmon)

how about a sauce for the chicken? An easy one has butter, honey, and garlic. Or do sauteed brussel sprouts with pancetta, shallots and blue cheese. A one pan side dish. How about roasting roma tomatoes. Ina Garten has a good recipe.

Just made this as a side dish and it was a fun alternative for us:

Parmesan Orzo:

1 cup uncooked orzo
1/3 cup low-fat sour cream
¼ cup parmesan cheese
1 Tablespoon olive oil
½ teaspoon salt
¼ teaspoon garlic powder
½ pint grape tomatoes cut in half
1 teaspoon dried basil
fresh ground pepper to taste


Directions

1. Cook orzo according to package directions.
2. Meanwhile, in a small bowl, mix together sour cream, parmesan cheese, garlic, olive oil, and salt.
3. When the orzo is cooked, drain and add the sour cream mixture, then stir in the tomatoes and basil.
4. Add pepper to taste, I was surprised that adding just a little bit of pepper really enhanced the dish.
